I've seen many threads recomending this restaurant, and I'm sure I'm missing others that answer my questions. :confused3 If so, please direct me.

1. How far in advance do I need to make reservations?
2. How tough is it to get waterside seating? pirate: This is what I would really like.
3. Dinner or lunch?

I made my PS about 40 days out. Though I have heard you can get PS right up to a few days before during some times of the year. I went for dinner so I could get the surf and turf. It was amazing

There really is not much difference between lunch and dinner, except you can get the monte cristo at lunch and the surf and turf at dinner.

When we got there at 5:15 for our 5:30 PS on a Sunday, we requested a waterside table. The CM at the podium said it would be an hour wait. We had a table in 10 minutes. It was not the best waterside table, but it was still a waterside table.

We made a spontaneous trip last weekend. It was very crowded at the park. We tried to walk up and get into Blue Bayou our first night but were told they were booked so that night after we left DL we went back to our hotel and called for a reservation the following day. There were not any dinner slots but we managed to get a 4:30pm spot. Upon arrival we requested a water front seat and were told it would be about a 30 minute wait but were surprised to be seated 10 minutes later. It was a great experience and the food is delicious. We had the Monte Cristo sandwich and loved it. Have a nice trip.

1. One can make their P.S. 60 days out. However, one can possibly make such one or two days ahead of time, but one is taking a chance in doing so. If you are certain about dining at the Blue Bayou, I suggest highly to call Disney Dining, as soon as you know when it will be that you would like to dine there.

2. It is not tough at all. I highly recommend to request such when checking in at the podium for your P.S. and to do so at least 20 minutes early.

3. It all depends upon what you have a taste for, because the menu is different. Price wise, there is not a hair of a difference.

Thanks for the menu. I can be a picky eater, and I found the link to be really helpful!
 
When we were there August time for lunch, we watched a number of people that were turned away and were told they had nothing for 48hrs but check back for cancellations. That was on a Wed. We like the heat break and we made ressie's 60 days out just to make sure.

Most of your questions have been answered, I just wanted to say that when you ask for waterside they will almost always tell you it will be a 30-45 min. additional wait. They tell you that to try to scare you off, we've never actually had to wait that long, our longest extra wait for waterside has been 10-15 minutes. :) Also, if you make your PS for the first seating of the day and check in early (at least 15-20 min) and make your waterside request you'll get it. :) When you call the dining line they won't take that request, you have to make that one at the restaurant itself. Oh and the smaller your party (4 or less) the easier it is to get that waterside table. :)
