I was given a pint of blackberries. Does anyone have an easy recipe for blackberry cobbler, pie, etc? I've currently got them frozen but hate to waste them.
 
I usually do balckberyy and apple. Get some cooking apples (don't know if you have Bramley over there), peel, core and cook very gently in a little water (a spoon or two - not more!) with sugar to taste if they are very tart. When they are slightly soft stir in the blackberries gently until the apples are just coloured with the juice (they can be frozen if you like!). Pour into a pie dish and top with cobbler or pie crust (I use shortcrust pastry, or else make a crumble topping - 6oz flour, 2 oz butter rubbed together, 3oz sugar stirred in then sprinkle on top and pat down a little to smooth.)
 
I love Blackberry Cobbler. The recipe I use is super easy. If you use frozen berries, don't thaw them first, they will bake fine from frozen.

Blackberry Cobbler

1/2 cup (1 stick) butter, melted
1 cup of sugar
1 cup self-rising flour (1 c flour, 1/2 tsp salt, 1 1/2 tsp baking powder)
1 cup milk
2 cups blackberries

Mix together melted butter, sugar, and flour. Wisk in milk. Pour into buttered baking dish. Spread berries on top of batter. Sprinkle with 1/4 cup sugar. Bake at 350 degrees for 1 hour.
 
That sounds nice - I've got some blackberries in my freezer too!

Anyone done this in a crockpot?

Just thinking about when I have poeple over to lunch, if I could leave the dessert in the CP it would save that scurrying;)
