My son will be turning 18 when we're at Disney next year, I need table restaurant ideas he is not picky at all. He does have shellfish allergy.
 
Do you have a budget in mind? Does he like certain atmospheres, parks, types of foods? WDW has anything and everything under the sun, so the possibilities are endless.
 
California Grill dinner timed for fireworks would be super sweet.
 

That's what makes this so hard! He's not picky at all. He does love Ribs and such. No budget in mind as of yet

If he loves ribs, you may want to consider going to Whispering Canyon and ordering the skillet for everyone. They will bring out a gigantic skillet filled with ribs, chicken, pork, beef, beans, etc. and they do really funny antics there. My DS once ordered the skillet for lunch and the waiter put a gigantic tablecloth around him as a bib. If your 18-year old is into schticky humor, it could be a lot of fun. You may also want to check out HDDR. It's a dinner show (yes, kind of corny) with ribs, fried chicken, etc. and they recognize all birthdays there.

If you'd rather have something a little more upscale and quiet, I agree with the PP's - Cali Grill is lovely and the view is extraordinary.
 
First Choice, California Grill during fireworks. The food and atmosphere is great. Really fun watching the fireworks from the restaurant or the balconies.
Jiko is a close second if he enjoys a slower dining experience.
If he is into Italian food, Il Mulino is hard to beat.
 
You can always have a special cake made for his birthday. I have done a larger specialty fondant cake and the smaller cakes as well. There is a cake thread that has so many great ideas!

We love Rose and Crown, great steaks and really good fish and chips. If he likes fried fish.

Sci-FI is a super fun place to eat. We love eating in the cars and watching the movie clips. They have wonderful burgers and milkshakes!
 
My youngest has a St. Patrick's day Birthday, and it’s almost always over his spring break (and we’ve been at WDW many trips). His favorite tradition is Sci Fi. I have a lunch booked for next trip, but also booked a Hoop De Doo dinner next trip to celebrate. I’m debating telling him but may keep it a surprise! Like most of my trips in the past few years, it’s just the 2 of us! I started taking both kids solo when they were 4 and 6. DH has gotten burnt out on WDW trips.
 
I think Whispering Canyon would be a great choice for ribs and good comfort food.
