Birthday Celebration to Remember

My family (10 of us) will be staying at OKW for 10 days in April 2008. My husband will be turning 31 while we are there. He has been to WDW approx 12 times and seen and done almost everything. I need to plan a complete surprise for his birthday! I want to do something or eat somewhere that would surprise him.

Does anyone have suggestions?

I am ordering a cake but need to pick the restaurant.

Besides eating out, are there other things to do for a fun filled birthday?
