You ride the bikes off property out on the public road/path (or I guess you could also ride in the DVC recreation area across the street) so I don't see any reason why you can't bring your own.
I was worried that Guests were limited to riding on the property, but if you can ride on the public road then I agree that we should be able to bring our own.
My son brought his bike one year and they had a storage closet off the lobby he could keep it locked up in. He ended up just bringing it to the room since all the buildings have elevators though.

We haven't biked to it, but rode our car there to walk the paths. We've riden our bikes down the Historic Jungle Trail. It would lead to Pelican Island eventually, I think, but we just did a 5 mile loop bike ride. We've done it a few times on different VB visits. http://www.realestateshows.com/show.php?id=210918
