Loved yesterday's question, and I went through my dining plans for my trip in 16 days!!!, and I think my crystal palace day might be the best. We'll get up early and have some fruit and maybe fiberone bar or cereal on the way to the bus for mk opening ceremony, and late morning have a snack- dole whip for me, then 2:20 crystal palace lunch, I'll start with a plate of salads and fruits, and then will have the chicken with vegies and potatoe, a small sampling of things, and I have to end with the banana bread pudding. Later in the evening, I will split a counterservice- sandwich/salad depending where we are.
I don't deprive myself when I'm there. I stay away from fried foods, and drink lots of water, and with all the walking, I'm usually up just a couple pounds. My problem is getting back on track after vacation, and that's why you all are here to help me. I will get right back on this time!

Today's qotd- life's curveballs can be so frustrating. We've had a few this year, and even though it can be tough, and I'll fall off the wagon, I try not to be too hard on myself, and when life starts to get back to normal, get right back on track. Lately, I'm really trying to keep a positive attitude, and am realizing, that if I am eating healthier and exercising, it is easier to do that. Pjlla's words keep coming back to me when I start to lose it- I can't control what is happening, but I can control my reaction to it. This weekend is going to be one of those situations. My 2 brothers and 2 sisters and I are going to clean out my mom's apartment. It will be so emotional, but eating out of control will not make it any easier. Thanks Crista for this question. You have helped remind me to take care of myself, and to think what do I really want. I want to stay in control with my eating, and I'm going to.

Here's my recipe for chick, broc, ziti.

Chicken, Broc, Ziti Casserole

2 tbsp olive oil
1 pound boneless chicken breasts
1/2 cup onion chopped
1 tsp chopped garlic
3 tbsp corn starch
3 cups no salt added chicken broth divided
1 8oz ff sour cream
1 lb pasta- ziti or bowties are best
1/2 cup shredded monterey jack cheese
1/4 cup plus 2 tbsp fresh grated parmesan cheese
1/8 tsp ground black pepper
1/4 cup fine, dry bread crumbs
2 tbsp melted margarine
3-4 cups broccoli cut in bite size pieces

Place chicken in saucepan and add water to cover. Bring to a boil, cover, reduce heat and simmer 20 min. Drain, let cool, and shred. Steam the broccoli. Saute the onion and garlic in olive oil til tender. Combine 1/2 cup broth with the cornstarch. Add the remaining 2 1/2 cups broth and the broth/cornstarch mixture to the onion/oil. Cook over medium heat until thickened. Remove from heat and stir in sour cream. Cook pasta according to package. Combine chicken, broccoli, sour cream mixture, monterey jack cheese, 1/4 cup parmesan cheese and pepper. Stir in pasta. Spoon into 13x9 inch baking dish coated with cooking spray.
Combine bread crumbs and remaining parmesan cheese with margarine and sprinkle over chicken. Bake, uncovered at 350 for 30 min.
If I make it ahead and it's cold when it goes in the oven, I bake covered for 30 min, and then uncovered for 20-30 more min.

makes 12 servings- 289 calories each, fat 6.1 gm.

For company, I usually add extra cheese and light sour cream vs ff.

Unfortunately I really need to work on this - I over eat!
When we moved last December I gained back the 27 lbs I had lost for my 50th birthday trip to WDW.

The best thing I can do is talk it out with my sis, sometimes that is hard on her so I need to be mindful of that.
 
Morning all! WEll... the news on the scale wasn't good, so I am holding off on my official weigh-in until tomorrow... not sure I will see any change, but we'll see. It just doesn't seem possible that I gained 3 pounds this week... I ate on plan and exercised over 30 minutes almost every day. It has to be water weight or PMS or something like that. My clothes still fit fine... in fact, I am wearing a pair of size 4 corduroy pants today!! So a big WOOHOO for that anyhow!

I will post my gain/loss tomorrow for sure, no matter what the number.

How do you handle life's little unexpected curve balls? What do you do when "life" gets in the way of your plans?


I try to have some sort of "emergency" type food/exercise plan in the back of my mind most of the time. If I need to run out of the house during a meal time, I try to grab a low point "on the run" meal... Special K crackers and LC cheese... or a yogurt or single serve cottage cheese plus a piece of fruit.... or a quick bowl of cereal and a small thermos of milk (today's emergency lunch in fact!). And whenever possible I throw my walking shoes/sneakers and a pair of sox in the car so I can fit in a walk if at all possible.

If I am put in a really difficult situation, I just do the best I can... like the day we were at DMIL's and there was just NOTHING OP to eat (even the veggies were coated with butter, sauces, etc)! I put a bit on my plate, took a few bites and pushed the rest around (and filled up with a big glass of water)... as soon as we left I hit a Wendy's and bought a side salad and snack wrap... threw out the wrap, put the chicken on the salad, and had that for a late lunch!! Or the time (at DMIL's house again :lmao:) I had to speak up for myself. Everyone was agreeing to order pizza... I spoke up and asked to have a salad special ordered just for myself! I hated to be difficult, but I needed to do that to take care of myself! If it were for one of my kids, I wouldn't hesitate, right??


I'm working at the middle school today, so I'm not sure how much screen time I will get, but I will be around!............P
 

Good morning everyone. I haven't posted lately just been in a blue funk so been reading but no posting.

So today I am determined to get in a better mood. Talked with friends about dh yesterday and I think it helped a little. So there was laughter and some sniffles but it helped. I tend to bottle things up until I can't hold it anymore so it was time.

Well I lost yet another .50 lb. :laughing: That seems to be the best I can do but at least I didn't gain like I did in the beginning. :thumbsup2

I was very impressed with how many of you could just rattle off some good eating choices at WDW. :thumbsup2 I need to put a little thought into this with my upcoming vacation. My plan is to eat 1/2 or smaller portions of everything and use the walking to offset the damage. Because I am travelling with family, there will definately have to be alcohol to help smooth the edges, if you know what I mean. :rolleyes1

I do a much better job with these kind of issues than I used to. I find that just asking myself "how is eating a bunch of junk going to help you today?" is enough to get to me make the right decision. And, if the answer is, I don't care and I do something I shouldn't, well, I dust myself off and head back in the right direction again.

Yeah, ME! :banana:I finally have reached the 160s again! 2 pounds this week despite it being the TOM. I really tried to stay focused. It's been 6 months since I last saw it so I'm really pumped! I've done a mile on the elliptical, and the 2 and 3 mile workouts today! I'm very energetic for some reason this morning. Plus I'm off to work to give an hour long massage today!

I hope to not overdo it tonight when we go out for Chinese food. DD2 turns 5 next Tuesday but DH and DD1 have soccer practice that night so I though tonight would be a good night. We'll come home and have a drink and save on some cash as well. This helps me too as then I don't have to try to work off the Chinese food in 3 days for the next weigh in! Of course tomorrow we go to Boston to see the HP exhibit and see some friends and then Sunday is DD2s b'day party and then having some friends over for pizza!

I put out 2 pairs of size 12 pants that fit but are a bit snug. I'm hoping by next week for them to be not as snug!

Scrambled eggs w/ham & cheese (little)
1 1/2 bowls of Golden Grahams cereal
about 5 handfuls of Ruffles chips
1/2 bag of Corn Nuts
1 Kit Kat
1 (mini) Snickers
3 oreos and
1/2 of a diet soda:rolleyes1

My body is SO weird, I don't know why! Good news is I worked out like a fiend before this feeding frenzy (could be why the ravenous hunger, now that I think about it) and...drumroll please..DIDN'T GAIN an OUNCE!!

I TRULY watch everything that goes into my mouth weekdays at work, but, sometimes the nights get me. Clearly, last night I threw caution to the wind..but I am back on track today! I haven't had such an episode in over a year, I think my body needed all the weird stuff I gave it for some reason :confused:

I am going to FOCUS on COW items this week and participate like I should. Thanks all..have a great weekend!!:thumbsup2

Nice job maintaining. That can be as tough as losing!

Thanks about the pants... but truly, they are a flukey size... gotta LOVE JCP clothes! Mostly I wear an 8... but I have a few size 6 and a few size 10 also. But I recently bought a pair of jeans at Fashion bug that are marked a size 3!! I am definitely not a size 3 (or 4) IRL, but I love having a tag that says that number!!............P
 
Down 1.8 this week. Wanted to go down about 3 pounds this week due to my small loss last week but pretty much knew that wouldn't happen. I set a goal of 1.8 pounds each week so I wanted to find a way to keep that going but oh well. I at least hit that this week again.

Well... my original goal was 135, but I decided a few months ago to lower that to 130. At last week's weigh-in I hit 137.6, so I am definitely closing in on my goal, but not there yet! Thanks for asking.................P

I'd be at DL instead of WDWI'd have a piece of fruit for breakfast, and then we'd stop for an early counterservice lunch and since we usually just get a bunch of stuff to share amongst us, I'd end up eating some salad, a few fries and a burger. For late afternoon I'd hit the Bengal BBQ and have a bit of everything, I love all the meat skewers, the asparagus skewer and the veggie skewer. Then later in the evening we'd probably go for dinner and I'd share a pasta dish and salad with one of my kids. No dessert that day, since Bengal BBQ would have been my treat of the day. Oh, and if I had wanted a snack, I might have gotten a frozen banana or a dill pickle on a stick!:goodvibes

Just deal with whatever the curveball is and try to get back on track quickly. I am learning to speak up, and if we end up someplace where I can't eat healthy, I don't get too worried over one meal, and just make sure to not let one bad meal or one bad day turn into a bad week.
If you drop a plate emptying the dishwasher, you don't throw the rest of the dishes on the floor!;)

GOod for you for thinking ahead to the eating you will do at WDW on your trip. It should be very helpful having a kitchen. I made a few batches of muffins before we left. I froze them really solid in my extra freezer, then I vacuume sealed them. I kept them frozen until we left and then I put them in my checked luggage at the last minute (in a small box). They arrived in perfect condition. I made healthy chocolate chip muffins for the rest of the family and some low fat/high fiber muffins for myself. We had a muffin (or two) with our coffee/juice every day. Like I said, it saved time and money, as well as calories. I could run and get the coffee/juice for everyone since I was always the first one up.... then I could feed the kids while they were waiting for their turn in the bathroom. And when need be we were able to eat our breakfast in the car on the way to the parks (we prefer to drive rather than use the resort buses). It worked out great!! And it was a treat for the kids, as I RARELY make muffins at home!!

I did well with my OP eating during our trip in 2008 and it really paid off. I did gain some weight, but not a lot. I was able to enjoy some of my WDW favorite foods/restaurants without going crazy. And I was able to come home and get right back into the right frame of mind and right back OP.

I like the muffin idea! I might actually pack some of the dry ingredients and buy the rest when we go grocery shopping at Walmart or Target and bake the muffins in the villa. It would sure save a ton of money over buying $3 cupcakes! DD10 loves choc. chip muffins, so that would be a great snack to have on hand.


I thought I'd take some time today to share a few recipes, since I have a bit of time to kill.

Here is one I posted last spring... but it is a great fall recipe. It have tried it and it is delicious! It is from the WW website.

Preparation Time: 10 min
Cooking Time: 60 min
Level of Difficulty: Easy

Warm up with our hearty sweet potato soup as the temperature starts to drop. Toast the pecans to help maximize their flavor.


Ingredients

2 large sweet potato(es)
2 cup(s) canned chicken broth, divided
1 tbsp reduced-calorie margarine
1 tbsp all-purpose flour
1/4 tsp ground ginger
1 cup(s) fat-free evaporated milk
1 tbsp chopped pecans

Instructions
Preheat oven to 400ºF.


Pierce potatoes in several places with a fork. Bake for 45 minutes, remove from oven and allow to cool. When cool, remove and discard skin; chop potatoes.


Combine sweet potatoes and 3/4 cup of broth in a blender or food processor; blend or process until smooth, about 1 minute. Set potato mixture aside.


Melt margarine in a medium-size saucepan; stir in flour and ginger, and then add milk. Cook, stirring, until slightly thickened and bubbly, about 5 minutes. Cook 1 minute more and then stir in sweet potato mixture and remaining 1 1/4 cups of broth. Cook, stirring, until heated through, about 5 minutes more. Pour into 4 serving bowls and sprinkle each with 3/4 teaspoon of pecans. Yields about 1 cup per serving.
Notes
For an extra flavor boost, consider adding a dash of curry powder with the flour and ginger.



It was SO yummy and creamy... but I suppose you have to like sweet potatoes. I did add a bit of salt when I served myself. I did not use the nuts, since my DS has a nut allergy I don't keep them in the house. And I needed more than the 2 cups of chicken broth that it called for to blend the sweet potatoes... and I had to blend in two batches. I also cooked my potatoes in the microwave because I didn't want to heat up the oven for just that.... but I think it might taste a bit better and bring out the sweetness of the potatoes if they were cooked in the regular oven.

LOL! I got a kick out of that. I've always said the pretzel bread and cheddar cheese soup is a great meal!

Congrats to the top 10:cool1: Job well done.

Tomorrow, DH and I are going to WDW till Nov. 4:cool1::cool1:. We are staying at OKW and then at BLT. Can't wait. We do have some F&W events booked, so it should be interesting to see what happens to my weight. I intend to try to workout, but I do expect to gain some weight.

The neat thing is, I started Nutrisystem on 3/23/09 and set a goal, I wanted to lose 50 lbs. for this trip:scared1:

I did it!!:banana::banana::banana: Hit 50.5 lbs. down this morning. I still want to lose another 20lbs. and have set a goal of 3/23/10, one year from the start. This trip is a break for me but I hope to also jumpstart my loss by eating more. I have found that if I boost my eating for a short time, when I go back to program I will then break through a plateau.

I've also found that eating more calories for a little while will boost my weight loss when I get back OP. Sure hope that's the case this week since I've basically been "on a break" for the last 2 weeks. I'm finally feeling healthy again, sore throat is totally gone and I'm ready to get back on track.

I have been MIA this week. I have been fighting a bad cold for the past week. Started with a sore throat on Friday and moved to my chest. I haven't worked out for over a week and my eating has not been good. When every I have a cold the only thing that tastes good are sweet things. Everything just taste off/bad.

So, I am your coach for the coming week. I am a West Coaster so I will try to remember to post the QOTD the night before...other wise be patient it might be noon Eastern Time before I get it posted. Sorry if any questions are repeats.

Just be patient, you'll get better soon! I was starting to think I was never going to get back to normal. My sinuses were horrible just 2 days ago and now all the sudden I feel fine.

Getting back on track afterward is always a huge problem for me too, so I decided to not stray so far from the plan while on vacation this time and maybe it won't be such an adjustment to get back on it!

Thanks! Another recipe that I'll actually eat! I wish I wasn't so picky, but I think it's partially because I get heartburn from lots of foods, so I just avoid them. I don't eat any Mexican or Chinese at all, no peppers or spicy things, and very little fried food, and I have trouble even going into a restaurant that serves fish because I can't stand the smell! Anything with chicken that's not spicy is usually a winner!

I went to my WW meeting after work this morning. I had skipped last week and have been eating horribly, but was only up 1.8# over the last 2 weeks which I was satisfied with since it's also my TOM. Hopefully I can get it off this week so I can get back on track for my 20# clippie! I only have 5 more weigh-ins til vacation and I have to lose 8# in that time, so I need to get serious! Going to the meeting helps me so much. I love my leader, she is hilarious!
 
Just thought I'd share in case it would help anyone else....I've been having trouble keeping track of my COW points, so I added each of the 4 challenges onto my WW journal pages for the week so I can just check them off the way I do the healthy guidlines. Since many of you are on or have been on WW in the past, hopefully a lot of you know what the journal pages look like and that will make sense!

And I'm going to try to keep flossing every day even though I don't get points for it this week!

Um..what do you want to know? I don't even know where to start. I am in my late 20's. I love summer and everything to do with water. I am happily married no kids. My husband is super fit and I want to keep up with him a bit. I love animals!

I am not a real yo-yo weight person but about every 3-4 years I notice I need to work weight off. this first happened about 6 years ago and again 3 years ago. I have never gone back to my "original" weight but I need to keep it in check. Now I noticed again that I was just feeling blah and not fitting my clothes like I used to.

In the past year and a half I gained more weight than I thought so I am really trying to get it off.

I do a lot of different workout types. I love pilates. I have also started doing something I hate: learning to run. Every week the running duration is upped. I have hated running my whole life but I know others who have done the program and are more unfit than me so I need to try! I am also currently on level 2 of 30 Day Shred. I work in other videos during the week.

I did have a goal before Christmas but think I may beat it so I have changed it a bit. I want to lose 8 more pounds by Christmas. I really hope I can do it. If not, I will jsut have to keep trying. I didn't lose this week, just maintained so I'm not super excited about that but at least I didn't gain.
