We have over 400 also and finally started organizing them and figured out a way to display and store them. He thought he was just about done collecting all the coins only needed about 20 more mostly from Ft. Wilderness - but when we came home from our trip at the end of Feb, we noticed that presscoins.com listed a few changes so now he has to get some at places where he thought he was finished. So I guess you never will actually be finished collecting.
We got the fold and staple 2X2 coin holders with an elongated cent window and put each coin in one. Mark Johnson coin and supplies (they are on the internet) have a great price on them. They also help protect the coin from tarnishing.
We then bought the notebook page holders that you put the fold & staple coin holders in (Hobby Lobby carries them as well as coin collecting supply stores. There are slots for 20 of the coin holders on each page. We bought a Disney scrapbook (9X12) from Hallmark - it has two posts so we punched new holes on the pages (they are meant to go in a three hole binder). We sorted the coins either by series or subjects (if not part of a series) and put them in the holders.
For our Universal pressed pennies, we picked up a scrapbook with posts at Hobby Lobby (Michaels also has them) which has a spot for a picture on the front. We are putting a picture of the Universal globe that is right outside Universal Orlando. We were originally thinking about doing the same for Disney (getting a black or red one) and putting in a picture of Mickey & Minnie or the castle but we saw the Disney one at Hallmark and thought it was really cute..
We looked at the coin holders that Disney sells, but if you just collect all the pennies Disney currently has you would have over 500 pennies (not including those that have been retired). Those coin books that Disney has only holds about 60 pennies and 9 quarters.
