Best strategy for using fp+ and two parks

We have park hoppers and will be heading down at the end of Jan. We want to go to FOP, and Navi, but also either Epcot or AK. At that time of year, which we have never been, what would be a good strategy for optimal use of the the fp system?
 
FP will only allow you to book passes at one park at a time - if you plan on doing Epcot and AK in the same day (I wasn't sure based on the way you worded your question but that's what I thought you were asking) - what I would do is plan to Rope Drop Flight of Passage, get a FP for Navi'i river ride and two other rides in AK. Once you've used your third FP, you can then book FP at the park you want to hop to (in your case, Epcot). You can only book one FP at a time after your first 3 for the day, so just be aware of that.

Thanks. So we have to use 3 fp in one park, then hop? What would happen if we used one fp then left that park, could we make fp in the next park when we get there? Can we make a fp in the next park before we are physically in the second park (assuming we use all 3 in the first park)? All this will be on one day.

You wouldn't have to book all 3 FP in the first park, but you have to use any FP you DID book for the first park before you could then book in the second park. You can book them as soon as any booked FP are used, so you could start searching for FP as soon as you used the last FP in the first park. You don't have to be physically in the park to book.

If you plan to RD FoP, be there at least an hour before opening time.
Use your 1 FP. As soon as you tap in for the FP, you can book your next 2 FPs for the park you plan to hop to. After you use those 2, then you can only get 1 FP at a time.

If 2 FP's are booked in the first park they can actually add their 3rd FP, in Park #2, as soon as they tap the first FP. Both FP's in Park #1 don't have to be used.

I would actually book your FP for Navi'i and rope drop FoP. Morning Fastpasses for Flight of Passage are REALLY hard to get, unless you're on a 10 day stay and booking it for the very last day of your trip.
