@JZCubed - Fresh is the only breakfast I'll bother with at WDW because of the juices. Its also cheap as a recall. I'm not a huge fan of buffets, but that one is actually very well done.
A lot of Dis'ers don't get to the Swolphin - its a lovely property to breeze through. You might also consider their pool bar - Cabanas - it has couches and a very loungy vibe with surprisingly great food. Their tuna poke and calamari are quality. I mention it often. Its a great place to relax with a cocktail.
When we first started staying at Swolphin, we had to find a comfortable spot for us to be with our infant. Cabana was just the best poolside experience for us. And I made a 'friend' with one of the 'cabana boys' when I recognized him working at another restaurant. He was our Server last summer at yet a third establishment. The other customers must have thought we were cousins or something - turning my child's early evening frown up-side-down - as we reminisced about restaurants that had come and gone.
Cheap breakfast at Fresh? I think about $25, but they take DVC for 20% discounts.
So, after the discount, plus the tip = $25 for what you & I both believe is a superior breakfast at Disney.
Yes, there is the juice bar - and that alone can add up to $20 if you take even a few of those shot glasses they place on the counter.
Then the carved breakfast meats along side the made-to-order eggs, pancakes & waffles (with your own omelette fixin' station).
Like you, I avoid the buffet which consists of wasted-calorie breakfast pastries (like what they have at Be Our Guest), but my child eats a bowl of cereal (that her mother would never allow in our house) - and we don't get charged for that.
And the critical element for us - is the coffee any good (which means dark roast to us)? It must be, because we enjoy going back.
But I am looking forward to trying Bon Voyage just once....CA Grill Brunch too (the pricey sushi is on their buffet) to kick off Christmas Eve with my child that has yet to learn the secret of Santa. We're going to these 'extra' breakfasts because a.) my wife likes brunch, and b.) we're focusing on nighttime events with the child (who seems to turn into a pumpkin just past 9pm).
