MK is a good option, but several of the top rides will be closed.
EPCOT works well as only Test Track would be closed.
My pick is Hollywood Studios. Other than Indy, everything else is inside and will not close.
Any of the parks are good when it rains as the rain clears out many guests and it takes several hours for them to fill back up after the rain stops.
