I suppose I'm a purist. Mac and cheese should be, well, macaroni and cheese. Once you start adding seafood to it, it becomes tuna noodle casserole. It doesn't help lobster, etc. aren't kosher and hence off my list, nor would I eat it with meat. (No, I've never had a cheeseburger.)
For me, it's all about the cheese. I've tightened my requirements in recent years and won't buy cheese with animal rennet for home use, but still, a trip to Whole Foods can turn up some wonderful flavors.
