Best days??

We are getting some detailed plans lined up for our trip late July. I know it will be a busy time of the year, but could you recommend what days you feel are better for these activities? We will be staying at VGC

The parks of course (2 full days, plus same late nighttime entries after exploring other parts of the area)
Universal (last time we went on a Sunday and it seemed to work out well)
A tacky bus tour of Hollywood area, Farmers Market
Venice Beach and near by Marina del Ray
Huntington Beach-I would like to watch some surfing, any great dining spots here?
