Best day to visit water parks

Do I assume that the water parks are more crowded on Sat & Sun?
Is it better to visit on a Tue or Wed as compared to a Thursday?

The theme parks are are more crowded on a weekend, so I would consider the water parks instead. But the best time for water parks is during hot, crowded afternoons. We always hop to a water park on those afternoons, then hop back to the theme parks in the evening.

When are you visiting? Water parks have a rather large local presence, due to the relatively inexpensive water park annual pass. If FL is out of school, weekends get a lot of locals, and less out of state. But, weekdays will see less locals, and more out of state (taking a day off from the parks). Not sure you can predict which is better or worse.

If FL is in school (like end of Aug) then weekends are a lot less crowded than weekdays.

Edited to add: I would guess that the start of school makes weekend water park trips less enticing.

In our experience, it really doesn't matter. We've been every day of the week and really don't notice a difference. They aren't as busy as the main parks anyway. Crowds at the water parks are much more dependant on weather than they are on day of the week.
