best CS options for a vegetarian?

Traveling with my mom who is a vegetarian, mostly for health reasons. She does not do milk at all, but she does eggs. she also cannot handle tomatoes (so no salsa or cheese on her pizza, just te dough and the veggies for example) or high sodium content (no soy sauce in her veggie lo-mein ie). She is very willing though to try different things so I am thinking it is gonna be easy to dine in WS in Epcot, not so sure about the rest of the parks or elsewhere in EPCOT. We are doing the dinng plan and our ADRs are set, but we are looking for CS options at each park that she will be able to eat something (and enjoy it) other than french fries. I look forward to your suggestions. Thanks!
 
Morroco in EPCOT has a nice vegetarian plate with hummus, tabouleh, pita, etc.

At DHS, I had a nice roasted vegetable and hummus sandwich at Starring Rolls cafe.

MK...hmm...I usually just get fruit. There's also a baked potato stand in Liberty Square.

AK, again, I usually just get fruit. They have fruit plates at Flame Tree, and also at the snack stand in Harambe.
 
At MK we ate at Cosmic Ray's and I had a Veggie Wrap that was actually VERY good for CS!

EPCOT....Sunshine Seasons had a veggie Cuban sandwich that was also very, very good.

AK, the lines here were SO SO SO SO SO LONG for any food place so we just went back and ate at the Poly in Capt Cooks where I had "Grown Up Grilled Cheese" , so that is probably not an option for your mom!

DHS was a veggie burger at....Rosies? I think that was the name! Right across from Beauty and the Beast.

Also, Earl of Sandwich in DTD has a ton of options and I had a really good sandwich there it was Caprese aka tomatoes and cheese!!!

Columbia harbour House in MK has a great veggie sandwich, which I don't think would contain milk but would have no idea about the salt content.

Tangierene cafe in morroco has a veggie platter, with hummus, tabboleh, pita bread etc, but again no idea about the salt.

Sunshine seasons in Epcot has another good veggie sandwich. But the standard vegetarian CS choice appears to be cheese and tomato pizza, so I'd suggest she really study the menus beforehand to see where may have suitable options for her diet.

I recommend Tangierine Cafe in Epcot and Columbia Harbour House in MK. In the Studios there are a few choices, but mostly cheese pizza. The veggie cheeseburger at Rosie's should be able to be made a regular burger. In AK a veggie burger would be her best option.
 
Columbia Harbor House has a good veggie sandwich. If you feel like leaving the parks, the Grand Floridian Cafe has a good vegetarian selection at lunch and the food is excellent.
