I'd say you'll have 60-90 min to leave MK, boat to Poly (my advice vs. monorail with it's several stops), eat and boat back.
Nice tidbit, time it around dusk and you can catch the torch lighting ceremony at the Poly (very fun)

Cool! If we could afford it, that's probably where I would have chosen to stay. I don't know that we could ever afford it though. :( I've never stayed anywhere that cost more than $150 a night- on the high end! Had to break that rule to visit Disney.

Looks like sunset will be at about 7:50 p.m. on the day we're there- so odds are we will probably miss it. The park is only open until 9:00 p.m., and we want to see the fireworks and get the most out of our day. An hour to an hour and a half isn't terrible though, if it includes transit and dining. I will keep it on the short list! I can only imagine how cranky this day of endless heat and walking and transit will make him though....I really have no idea what to expect out of this! Thanks again for sharing your wisdom!

If he starts to get cranky stop at Castle Couture for a fresh sprinkling of Pixie Dust for his eyes ;)

You'll have fun. People don't starve at Disney, that's for sure. And portions are so big you may not want much more than a hot dog for dinner. Casey's really is good (if you skip the fries)
 
I haven't eaten there, but I've heard really good things about the mac n' cheese at Friar's Nook in MK. I also really enjoy Liberty Tree Tavern for dinner. It's basically all Thanksgiving food. It's nice to stop and have a break at a sit-down restaurant while you're in the park. I'm glad you're doing BOG for lunch - I love it!
 
Since this is your first time I wouldn't leave the park to eat. So if I had to pick a burger place other than Plaza I suspect Cosmic Rays. The burgers there aren't awful -- in fact, they are entirely edible -- plus they do have a topping bar (I assume they still have it) that isn't bad. I just won't go back because it wasn't particularly clean last time I went. I'm sure you'll have better luck on that front.
