Best 1 TS versus weakest signatures

Two 1 TS restuarants that seem to get nearly universally positive reviews on these boards (and elsewhere) are Saana and Kona.

On the other hand, signatures (and by this I'm talking true signatures, not CRT or dinner shows) that get somewhat mixed reviews include Yachtsman, Narcoossees, Hollywood Brown Derby, and LeCellier dinner.

For those who have experienced eating at most of these places, would you say that Saana and/or Kona are better in absolute terms than at least some of the above-mentioned signatures? (Or are they mainly preferred because you get more bang for your OOP or dining credit buck?)

Put another way, if someone else was paying for you to eat at any of the above-referenced restaurants, what would your order of preference be?
 
It is difficult to compare somewhere like Kona to Narcoossee's somewhat because the food offerings are very different. I ate at both places and loved them both.

Narcoossee's was much quieter as far as atmosphere goes. It was a little more relaxing. The tables at Kona are closer together...we ended up having a conversation with the couple next to us at Kona.

At Narcoossee's I ordered the surf and turf and at Kona I ordered the Teriyaki steak. Both were excellent and memorable. The bread & macadamia pineapple butter at Kona wins for sure. I preferred my almond cheesecake dessert at Narcoossee's over the Kiluea torte and chocolate creme brûlée at Kona.

We were on the DDP (free) but if paying out of pocket I wouldn't go to Narcoossee's. Our bill for 2 adults was $200. My husband wanted lobster on our trip so we were "forced" to use 2 credits for that meal. It's definitely not worth $200 but that is Disney pricing for ya! In the future I don't think I would use 2 credits for any meal, regardless of the restaurant. I would have rather had the extra meal somewhere else. If paying out of pocket I would have ordered something cheaper at most restaurants, though.

As far as overall food quality, I found most restaurants to be similar. The signatures don't seem to stand out more than somewhere like Kona food wise.
