I would agree with the previous poster, be honest with your planner, they do it every day and know what they can offer if the budget is tight. They will go out of their way to make sure you have a wonderful day within budget.

Our problem has been that we have very few guests and therefore have needed to spend more money on F&B than we would have liked in order to hit the minimum's. But we are only about $120 over our minimum spend and we have Mickey, a gazillion balloons and a fancy car to ride in.

Think about what you are going to regret no having and ditch the rest. If flowers aren't your thing, keep them simple, have them sprinkle pixie dust on the tables instead of center pieces, everyone will excited about the pixie dust rather than thinking about flowers not being there.

I'm sure you'll get things sorted.
 
I don't know how much of a help I can be since I had an escape and not a wishes wedding...however, I see that you want to add a candy bar and dessert table. Since you are already spending $125/person on food and you are having a cake, I would reconsider. The biggest regret I have about my wedding is having too much food. It was a huge waste of money. I think cake is plenty for dessert.
