So we're doing Dine With Shamu on Sept 18th at 1130. Having never done this before, I'm wondering:

1) Can you see the live show from where you will be dining or do you see it on a video screen?

2) Would you recommend seeing the show from the stadium as well? Do you miss a lot during lunch? (the next show is scheduled for 5pm that day)

You see the show from the video screen that is set up behind stage. The thing you can see and others cant, is the preps that go on behind the scenes for the show, like the trainers lining the whales up, rewarding them etc. Fair warning, unless they have changed something, it is a fixed image meaning that its a wide angle view of the show, with no close ups.Camera doesnt move.I recommend going to see the show, at some point before or after you eat.I think youd have to go after you eat, if remember the 1130 is the 1st show. You do miss a lot, like the expressions of the trainers and whales as they go thru the routines.Close ups as the trainers come out of the water with their whales etc.

I've noticed on the SW website that a 230 Dine With Shamu show has been added, but Believe is still only 1130am and 5pm, which is the times of the other dine shows. Should I expect to see a Believe show added at 230pm?

Could be that they are going to add a show. The closer you get to the actual date, the more definite it will be.

Truck1 is correct. Its a good idea to see the show after eating. The video screen and Dine With Shamu is good for seeing the show, but like he said the camera doesnt move so you dont get that up close and personal feeling that you get watching the show from the stadium. The 2:30 Dine With Shamu that your seeing will not have a Believe show going on during that time. But a Believe show may be added the day before or the morning of if for some reason, there is a large unexpected increase in park attendence for that day. When Ive gone to seaworld and done Dine With Shamu when there is no show going on, they play a video on the video screen instead. I would reccomend going to the Dine With Shamu that has a Believe show going on at the same time so you can see the show from the backstage perspective and then afterwords, go to the stadium to see the show from the stadium perspective.
