There's the galley tour towards the end of the cruise on a sea day (part of the art of entertaining series)
There's an Art of Entertainment "class" / session that will usually let you go up on stage in the Walt Disney Theater.
There's a tour called "The art of the Disney Magic" that is part of the Navigators series that will lead you around the ship pointing out some of the different art/decor of the ship (And on the Magic you will KNOW what Art Deco is)
