Been many times but not confused and need some help

We have been to WDW many times, had for the most part, tickets and ADR and all of that figured out. We are planning a rather spur of the moment trip at the end of May-recognizing it will be busy because of a holiday, but still it is the only time we can go so we will make it work. So, I thought I was all systems go until I started reading about the FP+ system and am now worried about buying tickets. Usually I do the UT tickets and pick them up-but now I am guessing it means I can't book FP+. But I also see others could have booked their fast passes as early as 60 days out-so will it matter-are all the good fast passes gone? Do I buy my tickets online from Disney so I can do fast passes or get the savings from buying them from UT since all good fast passes are likely gone?

If you purchase tickets in advance, they will need to be registered to your MDE and then you can make your FP+ selections. Only guests staying at a Disney Resort can book 60 days out. You will be able to book 30 days out with a regular ticket.

You can wait to make your selections the day of at a kiosk, or with the app, but your selections might not be ideal. The most popular FP+ are Anna and Elsa meet and greet, the new mine train (open May 28th, FP+ can be booked now) and TSMM. You should be able to get same day FP+ for most things, even TSMM, especially if you have a small party size, but I would count A & E and SDMT out if you are booking late or day of.
 
Anna and Elsa are probably gone (unless more open up.) Mine Train is only open the 28th and after but you'd need to wait for that to open up too.

Nothing else should be completely gone. Not even Toy Story. If you have a big party, try booking them a few at a time for similar times.

We are going at the end of May and started booking FP+ a week ago. Everything was still open except Anna and Elsa. We were lucky enough to get FPs for 7DMT the morning they were released but when I was rearranging some it said they were gone. Everything else was still available.

Doing a last minute trip end of May so DS#1 can ride the mine train. He and I have APs. DS#2 does not. While our last trip I got the others from UT, this trip I bought direct from Disney online and was able to book immediately.

I've been looking at the FP+ for the next few weeks and there is lots left but I wouldn't expect that if you wait until day of arrival. Tonight I saw Anna & Elsa plus Wishes still open for Mother's Day so even the impossible might be there. Even saw some 7 Dwarfs available the first few days it's open.
