On December 31st we are arriving in WDW and wanted to head over to Beaches and Cream first thing (around 2pm-3pm). I know the parks are packed, but is every nook and cranny of WDW crammed with people? or from any of your prior experiences, will we be able to find a seat pretty easily?

Not from experience, but highly unlikely. This is one of the busiest days of the year all over WDW, and B&C does not take ADRs.

We eat at B&C about once a month or so, and never wait for more than 10 minutes to get seated, but thats usually because we prefer to sit at the counter and most dont. I would think around 3pm it shouldnt be too busy since you are kind of between meals, but then again NYE is a different animal all together...

Thank you for the responses.

I pretty much figured, from reading that mealtime on a regular day can get hairy with seating. We still plan on taking the trip over, if it is an insane wait we will postpone until our EPCOT or Studios day. It will be four of us young adults and we wanted to scarf down the Kitchen Sink, so the counter seats would be fine with us, but not ideal for gathering around with spoons.
