Bar Cookies from Cake Mix

1/2 cup butter
1/2 cup packed brown sugar
2 tablespoons water
1 egg
1 (18.25 ounce) package white cake mix
1 cup chopped walnuts
2 cups semisweet chocolate chips

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.

In a large bowl, cream together the butter and sugar until light and fluffy. Mix in water and egg, then stir in cake mix. Finally, mix in nuts and chocolate chips. Spread mixture into pan.

Bake for 30 to 35 minutes in the preheated oven. Cool completely before cutting into bars.

Here's one that we like- it uses a brownie mix

S'mores bars

8 to 10 whole graham crackers(about 5 inches by 2 1/2 inches)
1 package fudge brownie mix (13 x 9 inch pan size)
2 cups miniature marshmallows
1 cup (6 ounces) semisweet chocolate chips
2/3 cup chopped peanuts

Arrange graham crackers in a single layer in a greased 13 x 9 baking pan. Prepare brownie batter according to package directions. Spread over crackers. Bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean. Sprinkle with marshmallows, chocolate chips and peanuts. Bake 5 minutes longer or until marshmallows are slightly puffed and golden brown. Cool on a wire rack before cutting. Yield:2 dozen

You can make regular cookies from any box of cake mix. Just add one egg and 1/4 cup oil, mix into dry mix (it will be thick) and drop on a cookie sheet and cook at 350 for about ten minutes. they are yummy and easy! You can get creative and add chips, or M&M's or anything to the mix.

One more:

STRAWBERRY SQUARES

1 Strawberry cake mix
1 1/2 Tablespoons Milk
2 eggs 1
1 cup powdered sugar
1/3 cup oil

Preheat oven to 350 degrees. Mix together cake mix, eggs & oil until stiff. Spread the dough evenly in a lightly greased 13 x 9 inch pan. Bake 14-16 minutes.

Mix the milk & powdered sugar. Drizzle the glaze over the hot squares. Serve warm, or at room temperature.

Should be great with a lemon, orange or chocolate cake mix too!
