How long do you bake your monkey bread for & at what temperature?

I found a recipe for it a couple years ago online & have been experimenting with time/temp on it ever since. The original recipe called for 20 minutes at 325... it looked fine when I took it out of the oven, but after eating the outside layer, everything else was uncooked.

Now I do 30-35 minutes at 350 but I still seem to have some raw pieces on the very inside. But the majority is cooked.
 
My recipes is 30 minutes at 350. I have never had an issue with the inside being remotely raw..if anything the outer edges get a little more cooked than I would like but not burnt. My Mom has been using the recipe with this cook time for years..if it gives you any idea she did it while I was a kid and I have been making it on my own as an adult for about 18 years now.

Oven temps can vary and 350 isn't always 350 so unfortunately it might take some trial and error to find just the right temp/timing combo as it's clear your stove and mine don't cook the same since mine is fully cooked with a slight overcooking outside in the same cooktime yours is slightly raw inside.

Amount Measure Ingredient -- Preparation Method

2 1/2 cups sugar
4 teaspoons cinnamon
4 cans refrigerated biscuits
3/4 cup butter -- melted

Oven 375 degrees. Lightly grease a 12 cup fluted tube pan.
Mix sugar and cinnamon in a 1 gallon plastic bag.
Working with 1 can at a time, remove biscuits and cut each one into 4 equal pieces. Coat with butter. Add to bag with sugar mixture. Close bag and shake to coat.
Gently press pieces into prepared pan. Repeat with remaining cans of biscuits.
Bake 45-50 minutes until browned and pick comes out clean. Remove from oven and immediately invert pan onto serving plate. Remove pan.
 
Meant to add..what might work best for cook time could vary depending on what you are using for your rolls. What type of rolls are you using?

My recipe calls for frozen rolls (I use Rhodes brand) that you are to let soften, then cut in half. You lay those out, put the sugary mix on them and then pour melted butter on. Let set overnight to rise and then bake.

(I use walnuts instead of pecans although since becoming allergic as an adult I make it without any nuts).
 
This is the one I use. The trick I have found to make sure everything is evenly cooked is to use a bundt pan. If you don't have one of those, put a clean (empty) soup can or something in the middle so that warms the rolls in the center.

Monkey Bread

1 cup brown sugar, packed
2 small packages (or one large if you can find one) butterscotch cook and serve pudding
1 stick of butter
26 Rhodes brand frozen rolls

Liberally grease a bundt pan (I use cooking spray)
put frozen rolls in pan
sprinkle brown sugar and pudding over the rolls (dry)
cut stick of butter into pats and place around the rolls

put in oven covered with a towel overnight-do NOT turn on the oven

In the morning, REMOVE towel, keep rolls in oven, turn oven on to 350, bake for 30 minutes. When done, invert bundt pan on large plate to remove rolls, serve.

Sometimes I melt the sugar and butter and pour it over the top depending on how much time I have.
 
I use a bundt pan and usually let it cook 45 to 50 minutes. I was having the same problem, the inside was raw. My bottom outside edge pieces are a bit hard but nothing is raw.

The recipe I use calls for 3 cans of Grands biscuits, each one cut in quarters. Then rolled in the sugar mix, placed in a bundt pan with the butter/brown sugar mix poured on top & then baked.

I'll try it for a little bit longer (maybe 40 minutes) this year & see how it comes out.

DD & I make it when we get up in the morning while we're waiting for my parent's to come over before she opens her presents. It's done & cooled for everyone to eat by the time she finishes up opening what Santa left her. :)
 
Whatever you do, just make sure you leave it in there long enough! I remember I made it one year - I thought it was done, and I plopped it out, and OMG it was a horrible gooey uncooked mess!!! The good thing about it though - Just plop it back into its dish, and right back into the oven, and no one will be the wiser! Good luck - I always make mine with orange zest and juice.... It makes people think they are eating something healthy... lol
 
I made some yesterday in a bundt pan, 40 minutes at 350. The outside pieces were a little harder, so I thought I baked it for too long, but DH likes the pieces that are a little more well done. No issues with the inside pieces being too doughy. I got my recipe from Pillsbury and used their biscuits. I've made monkey bread in different pans and have found that the bundt pan works the best.
