I'm making a few different cookies tonight and tomorrow for Fri and Sat. Should I refrigerate them? And then let them come to room temp to serve? Or should they be ok til then?
 
Personally, I would pop them in the freezer. I start my Christmas cookie backing just after Thanksgiving, and freeze everything. They are wonderful when served on Christmas.
 
Yep you can freeze them. Cookies freeze well and can last quite awhile that way.
 
Either freeze them for just baked freshness or put them in an airtight container.

Take them out Christmas Eve morning. They'll only take a couple of hours to unfreeze. Heck, we eat them right from the freezer, too! Yum!
