My husband and I are in our 30s with an elementary aged kid. We tend to want to "look nice' for dinners. So for me it's usually a sundress or pants and a blouse...never shorts. My husband wears khakis and a button down or polo. Now our son wears shorts, but they are nice in the sense they have to be ironed. 
For semi-formal nights, we do take nicer clothes...something that you'd wear to a wedding or special church (like Christmas or Easter). I too like the idea of dressing a little nicer for dinner. For me, it's part of cruising. However, to each his own. I paid for my cruise and I'll dress how I want. You paid for your cruise and you are allowed to wear whatever Disney says you can.
