atkins bake mix

For those who have purchased the Atkins Bake Mix, can you tell me if it goes a long way? Their products are expensive, but I'm willing to try it if it lasts longer than a recipe or two. Quite a few recipes that I'm interested in call for it. Are there any close alternatives to it at the grocery store?

Also, are there any other Atkins products that are really worth the money? Thanks!
 
I do not know if there are similar things or not out there but you can go to www.vitacost.com and get the Atkins bake mix for $7.99. That is the cheapest price I have found. Still expensive but better than the Atkins website!!

The bake mix has a strong soy taste... OK in some things (where it's used in small amounts, or covered up). You may or may not like it (I tried to make some Red Lobster biscuits... BLECH!!!!)

You can make your own at home, with or without soy...

Soy-free bake mix

1 cup almond meal
1 cup vital wheat gluten
1 cup plain whey protein powder
4 packets Splenda
2 Tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt to balance flavors

BAKE MIX I (Atkins knock off)

1 C soy flour
2 C soy protein isolate
2 TBL baking soda
1 tsp salt
2 TBL granular Splenda

Mix well and then sift together. I store mine in the refrigerator and use in the same proportions as any recipe calling for low carb bake mix. I usually use the bake mix as a slight addition in other recipes

3 carbs per 1/2 C

BAKE MIX II

1/4 C oat flour
3/4 C soy flour
1 1/2 C soy protein isolate
1/2 C vanilla whey protein powder
2 TBL baking soda
1 tsp salt
2 TBL granular Splenda

Low carb Bisquik version

9 cups wheat protein isolate
1/3 cup baking powder
1 tablespoon salt
1 teaspoon cream of tartar
1/4 cup Splenda ®
2 cups lard

Sift baking powder, salt, cream of tarter, and Splenda ® with wheat protein isolate 3 times. Cut in lard until mixture is the consistency of cornmeal. Store in covered containers in refrigerator or freezer.
 

Thanks so much dizneegirl! How do you know which of these mixes to use for what? I won't being trying the Red Lobster biscuits!;)
 
I think your best bet is to try one that sounds good, and see how it works.

The one with soy probably tastes the closest to the Atkins, but I don't know if that's a good thing! ;)
