I don't know why only that one night is missing, but this far out I truly don't think you will have any trouble with the waitlist coming through.

I had to drop Dec 5th-7th AKV studio room (at Jambo though) last night, so it can happen.

There is nothing different Dec 5 from other days at that time. You are just in the highest demand week of the year, when inventory is limited to begin with, and even at AKV you can get one day during the week where, with 11 month reservations already in, more are showing up that day than possibly leaving in comparison to other days. Waitlist for one day should ultimately come through.

I got waitlisted this morning for 12/3 and 12/4 BCV studio, I think it's just that first week of December is very popular

I booked BCV studio for 12/1 to 12/6 just under 11 months out and had to waitlist 12/6 (which I got a few weeks ago). Just picked up 11/30 at the 7 month mark yesterday as I was all out of BCV points to complete the reservation before 7 months
