So let's say all goes well, we pass rofr in a month. We are looking to travel end of Oct. 180 days (6 months out is in another month). So basically right now were 7 months out. What are the chances we'll get 2 studios for a week anywhere if the soonest i could call would be the end of next month to book?

If you don't want an EPCOT area resort, it is likely you'll find DVC rooms on property. Probably AKV, OKW or SSR. BLT, is also doubtful because it is connected to EPCOT by monorail, and you'll be Traveling during Food and Wine Festival.

What you will find open at that time 6 months out will be SSR, OKW and likely AKV standard and savanna view at Kidani. Not likely for others but you never know if you can get lucky. You will definitely not be blocked out completely since SSR is always open year round at 6 months out
