Sorry for such a stupid question, but I am not doing Atkins. But yesterday I came across an old recipe of mine and thought - gee this is like a ham sandwich without the bread. Then I thought of my wish friends that are doing Low/no carbs.

The recipe is as such.

Take one piece of sandwich slice ham, spread with one teaspoon of soft cream cheese (Philly in a tub). Place one pickle spear on the end and roll ham around the pickle. Refrigerate for about 1 hour. Next you are suppose to slice it into bite size pieces, but I have found myself eating them like a finger treat.

Sounds Yummy...thanks for the tip. Those are all legal foods on ATkins!!

I make these ham rollups sometimes with a green onion instead of a pickle. Green onion is slightly higher in carbs than the pickle but not more than 1 gram. DH prefers the green onion to a pickle, it looks pretty on an hors d'oeurvre tray at parties too :)
