Yes i do...because our server at Palo (Sylvester) was our head server in 2005 - and he took really great care of Ellyn & I that night (he is really a WONDERFUL guy)...and brought us 3 desserts....YIKES - but i don't remember the name of that one....but i'm sure it can be found on the boards somewhere or maybe someone else remembers the name.....btw - even with 3 desserts that night & everything else - i only gained 2 lbs. during this cruise....WHEW!!!

Of course, I had intentions of going to gym onboard, but I admit, I never set foot in it. Your Goofy picture is great!

Yes they were very YUMMY for sure....i'm a chocoholic like your family...so i had the choc souffle, the choc lava cake, the triple layer chocolate cake, choc ice cream....i think that's enough to fess up to ....i didn't go to the gym on board, because i do that everyday....but i did walk the 10th deck every am and almost every night at least 6 laps each time, and always used the stairs instead of the elevator....

Panna Cotta

6 ramekins 6¼ hours 10 min prep
Change to: ramekins US Metric
1 1/2 cups whole milk
4 teaspoons unflavored gelatin
1/2 cup sugar
1 1/2 cups heavy cream
1 teaspoon vanilla
Topping
3 cups raspberries
1/4 cup confectioners' sugar
1 teaspoon lemon juice

Refrigerator Gelatin
Low Protein Gelatin
Raspberries Gelatin
Grease 6-6oz ramekins and place on baking sheet.
Pour 1/3 of the milk in pan and sprinkle in the gelatin.
Let sit until gelatin softens and swells, about 3 min.
Add the remaining milk and sugar and place over medium heat.
Cook, stirring constantly, until sugar and gelatin dissolves.
Do not boil.
Remove from heat and gently stir in cream and vanilla until blended.
Divide mixture into ramekins.
Cover and refrigerate for at least 6 hours or up to overnite.
Carefully remove custards and serve with topping.
For topping.
In a food processor combine raspberries and sugar.
Pulse until berries are pureed.
Then press the puree thru a sieve to extract the juice.
Stir in lemon juice and add more sugar if needed.
Pour over custards and garnish with raspberries or sliced strawberries

We went to Seven Mile Beach, and I didn't like it. The sand was rocky, the beach sloped downwards. I prefer any beach in N. or S. Carolina to that one! Also the fact that all the lounge chairs were crowded together. Didn't really enjoy being smushed against strangers. As far as it being beautiful, it didn't compare at all to Castaway Cay. We did the Dolphin Encounter in Cozumel, which we enjoyed. But as far as the rest of Cozumel that we saw, wouldn't want to explore it. We didn't go to a beach there, though.

Oh, a double dip is a cruise with 2 stops at Castaway Cay.

Hi there
Just returned back from Orlando a couple of hours ago. Slept most of way so not feeling to tired.
Hope you all got home safely - the weather seemed to deteriorate rapidly on Sunday. Very windy in Orlando and worse up country i believe
Haven't weighed myself yet so don't know what i put on!!!
We had a great holiday., Thanks to you all for making it even more special.
Spent the last couple of days shopping and going to Silver Springs. It was really lovely there - so different to the parks.
We were so relaxed after the cruise we didn't want to stress out again so didn't go into any parks. Went to Celebration yesterday which was also very peaceful and laid back.
Not sure if we got a group picture but will have a look later.

Hi Debbie...Welcome home - so glad your travels were safe - thought of you all yesterday - thinking you must be on that long flight - but hoped it was going well! So nice to spend the time with your family in Cozumel and on the ship!!! Will let you know when my sister & I do our Paris/London trip - maybe we'll have a chance to have lunch or somthing....

Dh's stomach bug turned into something serious. He ended up having emergency surgery Wed night to remove some scar tissue from an appendectomy (sp) a couple of year ago. He will be in the hosp at least until 4/28. If anyone can say an extra prayer for us we really need it.
