Apple Recipes Needed!

We had a beautiful day in NH today and my family went apple picking with some of my DD's friends from pre-school. It was so much fun.

However, we now have a 1/2 bushel of apples in our kitchen!

I'm looking for your great apple recipes that are not too complicated.

I'll share one of mine - I never had apples like this before I met my DH - I wonder if it is a New England thing? I thought the concept sounded terrible but it tastes great:

apples - cut into bite sized pieces, mixed with mayo (We use Miracle Whip Light, so not even mayo) - that's it. DH said it was a frequent summer side dish at his house. Tonight we used some Gala apples and it was sooo good. And I don't really eat a lot of mayo either.

So - what are your recipes? We have Macoun, Gala and Honey Crisp apples - very sweet and some tart Empire apples too. DH  apple crisp so I'm looking for a good recipe for that but also others too.

Can you help me out? Thanks!

We went apple picking two weeks ago and just tonight, I am using the last of the apples for yet another apple pie. It is cooling down at this moment. It smells sooooo good.

Apples with mayo? Sounds interesting, I will have to try that. :thumbsup2

I just posted on another thread that I don't cook and anything more than 2 ingredients make my head spin :scared:
So be careful taking any cooking advice from me (my dh and kids would tell you just skip to the next post).

I have baked apples and they smell and taste so wonderful (but I don't mind eating bland, plain things).

I take the apple and cut out the middle (from the top) to get ride of the pits.
I make the hole, from the top, not too wide but not too small.
I sprinkle in some cinnamonn and bake. I will say I put the oven on 350 since I think that is a normal temperature and bake until done.

This ranks up there with my "famous toast" so enjoy!

Each year, we pick 4 bushels and make lots of apple sauce, apple cobblers, apple pies, apple butter. This year I'm going to dehydrate a bunch with cinnamon sugar and make apple chips.

Apple Crisp

4 or 5 large large apples cut into slices
Sugar
Cinnamon
1 stick of butter
Yellow cake mix

Take apples slices, mix with a cinnamon and sugar (to your taste), and place into baking dish. Pour dry cake mix over the top and mix in a little cinnamon in sugar. Dot entire top with butter pieces. Bake in 350 degree oven for about 45 minutes. Yum!

I apologize that I don't have any recipes, but I just wanted to say that I looove Honey Crisp apples! I haven't found any at the stores in our area yet, and I'm patiently waiting for them to come.

HA! I just read about your "famous toast" :rotfl: Watch out for that jelly - too gourmet ;)

Baked apples sound great! As you can see from the recipe I posted - neither DH nor I are into complicated recipes (although can sometimes handle up to ~gasp~ 6 or 7 ingredients!)

YUM is right - sounds great! Thanks.
For some reason, I thought I would need oatmeal to make a crisp? Then again, as you can see from my previous response - no gourmets live in my house :lmao:

The butter and cake mix come out all yummy and crispy for some reason.

LOL!
Try smashing some brown sugar in there with the cinnamon next time. You'll have another famous dish to add to the two you have now! :thumbsup2 I laughed outloud about the toast

Slice peeled apples and add to a frying pan with butter, cinnamon, brown sugar and nutmeg or allspice if you like those. Toss over med heat till softened but not too smooshy.

Serve over vanilla ice cream.

YUM!

Also good in oatmeal.
