For Annual Passes, when they expire on a certain date, can you still get into the parks on the AP on that date? For example, let's say my AP expires 6/1/17, can I get into the parks on my AP on 6/1/17, or is 5/31/17 the last date I can use my AP?

Yes. In your example, the pass is still valid for admission on 6/1/17.
