Anyway to use AP to get discount and also add on dining?

Or is it package only? I would love to get an AP to save on the room and use later in the year, but not if I can't add on the dining plan

With an Annual Pass - if discounts are released, they are for room only reservations. Which means - no, you would not be able to add the dining.

If dining is being offered I think you can get it if you buy a 1 day base ticket for everyone in your party.

Which will save you 20% on all sit down dining at WDW, including Victoria and Alberts (the reason we're purchasing it, as it will easily pay for itself with that meal alone ).

If I remember correctly, DDE also provides free valet parking (you still have to tip) and some other benefits.
