Anyone using Ceramic Knives?

I just recently heard about these, and being a wedge salad addict, I thougt this would be great for not turning the lettuce that awful pink/brown.

I'm wondering if it's the metal blade that turns apples brown? I love to put together a nice fruit salad but can't stand the brown apples. I use to squirt a little lemon on the apples, but DD7 can taste the lemon and can't stand it.
 
My mother uses ceramic knives and loves them. I don't know if it's the metal that makes lettuce turn brown or not, though. Her knives are extremely sharp, and she can cut paper thin with them. They aren't for everything though--she can't use them on meat with bones, and you can never twist or pry with them or they could get weakened and shatter one day. So you can't have only ceramic knives (at least according to her), but for some jobs, they are reportedly wonderful. :thumbsup2
 
I thought it was oxidation that caused certain things brown?? Once an apple is cut, it's exposed to air, whether with a metal or glass blade.

All I know is if I cut iceburg lettuce with a knife, the edges brown quite quickly. But if I pull it appart with my fingers, the leftover head stays nice and crisp for days. I was just curious if this would be the same with apples.

ETA: I was watching America's Test Kitchen and they were tauting it for cutting lettuce and not having the uncut portion turn brown. Then I went online and a seller said it prevented "produce" from browning. I was just wonering if that would be apples too.
