Anyone in here decorate cakes?

I have to wonder if i someone is trying to send me a sign?:confused3

i used to own my own wedding cake business,( no party cakes, too much work for little $$)
I took 2 classes and jumped in head first.
i made ALOT of money. way more than i did at my partime job. ( my second summer, we enjoyed a deluxe vacation to WDW)
I closed down my shop, becasue it was getting in the way of my family at that point in time.
i have plans start my shop up again someday when my kids are grown, and i can buy a small storefront. ( my previous was attached to my home) If i can do that well there, i am sure i can do better in a storefront. :wizard:

Hi! I just found this thread today & I'm in a situation like you. I started a business a few years ago & fell in love with it, only wedding cakes or specialized (read: expensive) other cakes. It really started to grow & one weekend while I was making 20 centerpiece cakes I had a positive pregnancy test! Baby # 3. She's now 20 months & I've cut back like crazy this year, done no advertising and turned down cake after cake by being "booked."

Someday... right?

I did want to say that I read a lot of posts & I disagree with whomever said to never use a cake mix. I believe this is a regional thing. I'm in the midwest & doctored cake mixes is what people expect taste wise. I've conducted many a cake tasting & my people choose the doctored cake mix cakes over the scratch cakes every time here. I live in NY state for awhile and exactly the opposite was true (not that I was doing professional tastings then.) But my scratch cakes were what got rave reviews there. So I think this is a very regional thing.

It's hard for me to profess a choice over mix vs scratch; if it's cake, I'm going to like it! :laughing:
 

Here's a cake I just did for my DD8's end of season soccer party last night. Their name is the "Purple Panthers" and they were undefeated this season.

I was feeling rather uninspired doing this cake and was so busy all week that I got a late start. Unfortunately, the stars on the wires were still pretty soft when I put them on the cake. The purple star says "undefeated". Everybody loved it though. I'm probably my worst critic, but I see so many flaws on this cake. Oh well. The bottom tier is a basic yellow cake with chocolate butter cream and the middle tier and soccer ball were an experiment. I made a "Kahlua Heath Bar" cake that I hadn't done before. It was a huge hit with the parents!!!:rotfl2:

Edit: The color in the picture is weird. It should be a very dark PURPLE

Too true. I just had a tasting from a girl from Boston & she said she hated white wedding cake. She took one bit of mine & said, "This is amazing! Are you sure this is just white wedding cake?" I told her that living in Boston she had probably never had a wedding cake made from mixes & sour cream. She was shocked that it was a mix. I told her she had just grown up in the wrong area & her taste buds were midwestern. :rotfl:

Mary, Would you mind sharing how you did the kahlua heath bar cake? I tried an oreo cake last week. The kids loved it. Me not so much. The kahlua heath bar sounds awesome.

Sure, I doctored a cake mix. Here's what I did:

Duncan Hines Yellow Cake Mix (could probably use white, I had yellow on hand)
French Vanilla Instant Pudding
8 ounces sour cream
Generous Shot of Kahlua
Enough milk to equal a half cup liquid when added to the Kahlua
3 eggs
Crushed Heath Bar (I used 3/4 of a bag)

Combine all ingredients and then fold in Heath Bar. I baked them at 325. Time will depend on what size cake pans you use.

You could probably use more or less Kahlua and/or Heath Bar depending on taste. I was just experimenting. Let me know how it turns out.

Ok guys, I've taken a very long break from cake decorating. But DDs birthday is coming up and she REALLY wants a Camp Rock cake, we ordered a High School Musical cake as a back up, but if I can track down a camp rock kit we'll do that instead. Anyone know where to find one? Any ideas?! We've got 30+ kids coming.

I took the Wilton classes and I had a blast I took them with a friend and I was doing cakes alot when I 1st finished . Not so much anymore , but I have a huge kit LOL I have every single tip they made because my husband had no idea what to get me and bought one of everything online :lmao:
I made a Firetruck once and it was huge and it took me 2 days to just decorate it . One of the guys at the station was going to Iraq so it was worth it to see his face . BUT I have not done one since and the guys have pretty much all but given up on seeing it again

Quick cake question...If you bake a cake with a pudding filling, or say sour cream in the batter, do you refrigerate the cake?

My daughter and I are taking Wilton course 1 right now and last week we made a 2 layer chocolate cake and put vanilla pudding between the layers. Should I have refrigerated that cake?
 
How far does a 5lb tub go?

I've always just made MMF as needed but I wanted to try Satin Ice. I didn't want to buy too much in case I don't like it so I bought a 5lb tub of white and a 2lb tub of black to have on hand.

Also, once opened, how long will it keep without drying out?

To color it, do you just need in the gel color? I saw that they had several different colors of Satin Ice, but I didn't want to be pinned to just those shades.

I'm tired of making several batches of MMF (and getting covered in powdered sugar) every time I make cakes so I hope I like the Satin Ice. :lmao:

I'm making two cakes this upcoming week. One for my DD's 11th birthday and one for the school principal's 40th birthday. That one will probably be quite large.

HI everyone,

Well the judging was last Monday and let me tell you....the competition was FIERCE!!!!!!!! Even the judges said so! After it was all over I did talk with Aaron Morgan who is the head judge and pastry chef at the hotel, Collette Peters and Nicholas Lodge. All three said that they had placed my piece in their original list of 25. They then use that list to pick their top 10. I got some great feedback from all three on piping technique, gingerbread color, precision of my work and overall design. All three said that what made mine stand out was the unique design. Aaron especially gave me lots of helpful tips, on finishing out my design and was so great to talk to.

I already have my theme for next year and have begun my research. I started by taking very up close pictures of all the winners from this year so I have something to aspire to in the detail department.

All in all it was a fantastic experience....and was so much fun standing back yesterday at the hotel listening to all the people commenting on my piece.
