Anyone have any summer salad recipes to share?

We are having a pool party for my DDs 3rd birthday on Saturday. We had planned on doing a taco bar with all the fixings for dinner but since it is supposed to be 94 degrees I wanted to do something a little lighter. We are going to do a lunchmeat tray and a bunch of salads instead. Anyone have any good summer salad recipes they would like to share? I will probably do a potato salad and a pasta salad but I am looking for a few different things to add to the menu.

Antipasto Salad

Amount Measure Ingredient -- Preparation Method

Dressing
1 teaspoon Dijon mustard
1 tablespoon red wine vinegar
1/2 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup olive oil
Salad
1 head Romaine lettuce, separated, washed and
dried
1/4 pound salami -- cut into 1/2" cubes
1/4 pound provolone cheese -- cut into 1/2" cubes
6 ounces pepperoncini peppers
4 ounces sliced, sweet red piminetos -- drained
1 medium red onion -- thinly sliced and separated into rings

Dressing: Whisk together mustard, vinegar, Italian seasoning, salt and pepper in small bowl. Slowly drizzle in the olive oil, whisking until blended and thick. Cover and set aside.
Salad: Place lettuce in bottom and up sides of large salad bowl.
Arrange salami, cheese, peppers, pimiento and onion rings over top.
Serve salad dressing on side or drizzle over salad.

Oriental Cabbage Salad

Amount Measure Ingredient -- Preparation Method

3 ounces oriental noodles, chicken flavor
4 cups cabbage -- shredded
4 green onions -- sliced
2 tablespoons sesame seeds
3 tablespoons vinegar
2 tablespoons oil
2 tablespoons sugar
1/2 teaspoon ground white pepper
1/4 teaspoon salt
1/2 cup toasted almonds -- slivered

Crush noodles slightly. Place in colander. Pour boiling water over noodles to soften slightly. Drain well.
In a large mixing bowl combine noodles, cabbage, onions and sesame seeds.
For dressing: In a screw top jar combine seasoning packet from noodles, vinegar, sugar, oil, pepper and salt. Shake to mix well. Pour over cabbage mixture and toss.
Cover and chill several hours or overnight. Before serving, stir in almonds.

NOTES : I don't pour the boiling water over the noodles to soften. We like them a little crunchy.

Pasta Fruit Salad

3 cups uncooked medium pasta shells
20 ounces unsweetened pineapple chunks -- drained
1 large navel orange, peeled, sectioned and -- halved
1 cup halved green grapes
1 cup halved red grapes
1 medium apple -- chopped
1 large firm banana -- cut in 1/4" slices
8 ounces plain yogurt
1/4 cup orange juice concentrate

Cook pasta. Drain and rinse in cold water.
Place in a large bowl. Add the fruit.
Combine the yogurt and orange juice concentrate. Pour over salad and toss to coat.
Cover and chill for several hours.

Watergate Salad

Amount Measure Ingredient -- Preparation Method

1 package instant pistachio pudding mix
8 ounces Cool Whip
16 ounces crushed pineapple in juice -- canned
2 cups miniature marshmallows -- and/or
chopped walnuts

Sprinkle pudding mix over cool whip. Stir well.
Add rest of ingredients and mix well.
Refrigerate.
 
I sometimes make a recipe from Nigella Lawson in the summer that is unusual but really tasty. It's just chunked watermelon, crumbled feta cheese, pitted kalamata olives, and thinly sliced red onion. It sounds weird, but the flavors work really well together, plus it's pretty.

Another simple (and more traditional) salad is insalata caprese: just slice up the best tomatoes you can find, and make overlappig layers with some fresh mozzarella cheese. If you like also add some thin sliced red onion (rinse under cold water to take some of the bite out). Add lots of chopped fresh basil, salt and pepper to taste, and drizzle with good olive oil.
 
Tuna Pasta Peas Salad


1 Can of Tuna
1 Can of Peas
1 box (lb) of favorite pastas (rotelli and elbows work well)
2 tablespoons of mayo (or to taste)

Mix it up and serve (room temp or cold)
 

I make this alot:

Broccoli and Cauilflower salad

1 medium of cauilflower
3 bunches of broccoli
cut both into bite size pieces
1 cup of craisins
1 sunflower seeds
1 cup of bacon bites
1 cup of cubes cheddar cheese
1/2 small red onion chopped

dressing
1 cup of mayo
2/3 cups of sugar
3 tbs of white vinegar
mixed and chill for one hour
mixed dressing with broccoli mix.

Cole slaw with celery seeds is yummy (you can dress up bottled coleslaw dressing with about 1 teaspoon celery seeds whole for every 1/2 cup dressing.

Also good is a your plain tossed greens with tomotoes, carrots, cucumber and some apple with toasted pecans as a crouton served with some oil/vinegar based dressing.

Greek salad with feta, tomato cukes and served on romaine/iceberg (about half and half with each) a little bit of red onion is good in this as well. A red wine vinegrette (1/3 vinegar to 2/3 olive oil pinch salt pepper and sugar and 1/4 teaspoon dried oregeno flakes)

a veggie tray is also a good option.

Be very careful with 94 degree temps and anything mayo based though!!
 
Since it's going to be so hot, you may want to place the salad bowls into trays with ice, to keep them cold and crunchy. Nothing worse than warm wilted salads.
 
I get a bottle of Paul Newmans Basalmic Vinnegerette and pour it over chopped cauliflower, roma tomatoes, mushrooms, cucumber and olives...you can really put whatever you want. This is sooo simple and always the hit of the party. It is best to make it a few hours before so it has time to soak up the flavor.
