Anyone have a special/celebration dinner meal that you make?

I need a special dinner meal idea. My mom and dad are coming up to visit next Saturday and we are celebrating her birthday. I am a fairly good cook but she is an excellent cook!! I want to make something special for dinner but all my normal "go to" celebration meals are stuff that my mother taught me or makes better. Usually I would make Filets, but she does them better, or Prime Rib, but we had that on Christmas, or Italian is my speciality but that doesn't seem special enough.

I kind of wanted something to go along with shrimp cocktail and something a bit more 'gourmet' than normal. No fish though since DH doesn't like it.

Any ideas ... I am going to spend the next few days going through the Food Network website but I am just lost on what to do.
 
When I do a special meal for someone (especially when its for their birthday), I make their favorite.

For older ds, its a Mexican feast and for younger ds, its lasagna. Neither really formal foods but something they love and always enjoy having.
 
my mom always made corned beef in the crock pot for my birthday. It is my celebration dinner.

She usually roasts a cornish game hen for other birthdays.
 
I would probably make a nice salad, a cheese fondue, and a red meat to counter the shrimp. Roasted aspargus, and a choc fondue for dessert.

You could even do the meat and vegies in a fondue broth.
 

Red meat seems like the best alternative but what other than Filet or Prime Rib? I don't want to do basic steak ... too cold for the grill and too much work for inside!
