Anyone have a great Minestrone Soup recipe?

Everytime my DH and I are at a restaurant and have this, I always say "I should make this! It has to be easy!" - I am sure it is - Crock pot would be good (for the aroma it would give) or stove top -

I am sure there are a thousand ways to make it - So I would like one that people have tried and really liked -

I don't know if this is really a typical Minestrone soup, but it is the recipe DH's grandmother gave me, and it is good. I usually use whatever vegetables I have.


Simmer, but don't brown:

olivce oil
1 onion chopped
1 clove garllic, minced
celeryleaves, chopped (she says this is the important ingredient)
small amount of fresh parley, chopped


Add 2 cans chicken broth and 4-5 cans of water

Add any or all of:
carrots, diced
zucchini, diced
1/2 c. fresh peas or 1/4 c. split
1/4 c. lentils
string beans, cut up
small head of savoy cabbage, shredded
1/4 - 1/2 c. pasta (small like acini pepe, tubbetini, orzo, or broken up spaghetti)

Let soup simmer at least 1 1/2 hours.

Sprinkle on grated locatelli or parmesan cheese when serving.

**I like alot of pasta in the soup- add what you feel is a good amt

Cover Cook on Low 10-12 hours or High 4-6 hours.
Remove bay leaf.
Sprinkle with cheese.

I've made this before (GOOD!!!) - only added salt (to taste) - you can wait until after cooking to season.
