I make mine exactly as Missy1961 described with the White Sauce, start with a roux (flour and butter) then add milk-I use 1% cause that's all I ever have and works fine. Then I add whatever cheddar cheese I have or combo of cheeses such as cheddar and jack but my fav. is cheddar and then add some parmesan or romano. I did this last time as an experiment and oh my gosh it was really yummy!
But... if you add parmesan I would add little or no salt and just pepper cause the cheese has plenty of salt. When the cheese is all melted I add the cooked pasta, stir and put in a baking dish. Sprinkle with a mixture of bread crumbs, parmesan cheese and cheddard cheese and bake till a little browned on top. Really easy and doesn't take long. Infact, I'll be making it probably Sunday for dinner. This dish will last DS and I for a couple of meals this week and then I will freeze the rest to have in a couple of weeks.
