Anyone have a good mac n cheese recipe?

I make mine exactly as Missy1961 described with the White Sauce, start with a roux (flour and butter) then add milk-I use 1% cause that's all I ever have and works fine. Then I add whatever cheddar cheese I have or combo of cheeses such as cheddar and jack but my fav. is cheddar and then add some parmesan or romano. I did this last time as an experiment and oh my gosh it was really yummy! :thumbsup2 But... if you add parmesan I would add little or no salt and just pepper cause the cheese has plenty of salt. When the cheese is all melted I add the cooked pasta, stir and put in a baking dish. Sprinkle with a mixture of bread crumbs, parmesan cheese and cheddard cheese and bake till a little browned on top. Really easy and doesn't take long. Infact, I'll be making it probably Sunday for dinner. This dish will last DS and I for a couple of meals this week and then I will freeze the rest to have in a couple of weeks. :)
 
Creamy Macaroni & Cheese

1 (8oz) box Elbow Macaroni
4 cups shredded Cheese
1 (8oz) Sour Cream
1 cup Mayonnaise
2 tablespoons chopped Onion - optional
Salt & Pepper to taste
cracker crumbs or bread crumbs

Cook elbows in a pot of salted water & drain.
Combine elbows & next 5 ingredients.
Spoon into a lightly greased 11 x 7 baking dish; sprinkle with crumbs.
Bake at 325 degrees for 30 to 35 minutes.
Yields 6 to 8 side dish servings
 
I second the Over-The-Rainbow Macaroni and Cheese by Patti LaBelle. When I was reading this I mentioned it to my husband and he wants me to make it tonight. It's wonderful. I've also made a lower fat version by using fat-free half and half, light cheeses and lite velveeta. It was just as good and saving a calorie or two helps. And I also substitute either the Barilla Plus macaroni or the whole-wheat Healthy Harvest macaroni. :thumbsup2
 
These all sound so good....I'm going to experiment with a few.
 

Here's my MIL's super easy recipe:

1 lb of elbow macaroni
8 oz of Velveeta
1 can of Cream of Mushroom soup
1 can milk

cook macaroni, drain and pour in a 9x13 dish. pour soup and can of milkin a saucepan and melt the Velveeta in it. You may want to add a bit more milk. When that is all melted, pour it over the macaroni and bake. Yum.
