We ate there years ago ('96 I think) and we really enjoyed it. Service was excellent and the food was very good. That said, I am not in a hurry to go back because Disney has so many excellent restaurants I have yet to try.
Uncleromulus, we had dinner there a couple of years ago and enjoyed it. The atmosphere was quite nice. It is fairly dimly lit, and has an"atrium like" feel to it with all the plants. We had a nice booth that offered privacy so even though there were several conventioneers dining there, it wasn't loud at all. As for the beer selection, I am embarassed to admit we drink domestic so I can't help with the extent of their selections. As far as food goes, we had crab stuffed mushrooms as an appetizer which were delicious. There was a variety of fish, lobster, shrimp, pasta dishes, and beef selections. If I remember correctly dh had the lobster and I either had a steak or prime rib (I think the latter ) I remember it being very good and I am a bit picky about my beef. Is the Outback up to the same standards has some of your top 3 or 4 restaurants on property but I know you like to try different places so IF it is similar to what it was a couple years ago I think you'll be satisfied. Maybe someone else will have a more current review but I thought some info was better than none.

Actually, the Outback probably should be considered as much a "Disney" restaurant as Shulas or Palio or the Blue Zoo. Just like the Swan/Dolphin, those hotels are on WDW property--yet we almost never hear about any restaurants in the plaza hotel area. Maybe they are too much out of the way, and in the wrong direction--.
Anyway--I probably wouldn't ordinarily consider the Outback except we're going down with several other people in Oct and I was looking for an alternative restaurant with basic steak/seafood offerings.
And good beer, of course
