You say usual stuff but you listed things I would call the usual stuff. What is your list of usual things you've done and did you enjoy them? it might help to direct some advice...
To answer your question. To give some insight, i've only done these as father/daughter paying for 2 adults, my opinions might vary if I had to spend more money than 2 people to do it.
- I love after hours but the chance of that being offered when you go is slim to none but worth mentioning in case. It's my top #1 favorite ticketed event.
- Club Villian if it's being offered is my #2 favorite ticketed event.
- I enjoyed the star wars desert party but felt the others offered weren't worth the price. I went for a combo of good spot and desert and it worked out for us.
- Illuminations fireworks Cruise I found to be a great way to see that show in a different way if it's getting stale to you.
- Rivers of Light dining package might actually save you money or be the same meal plan credits if you didn't take the package. I liked the show and see if the package is a money saver or no additional cost no brainer if you are going to eat at one of the restaurants anyway. (I did it for the jungle book, that show wasn't worth it but I saved also 20% on the cost of meal so it was worth getting the package at the time for a discount).
- Ticketed fall/winter parties (
MNSSHP,
MVMCP) but I would caution the price and crowd has gone up to the point that I'm not planning to do it this year. If you've never done it, worth doing it once and I find MNSSHP to be the better value if your on property for it.
- i've not done a tour I didn't like so this might be a good way to add on something different.
Other things that cost money but not really a disney add on that i've enjoyed:
- renting the boats on bay lake and seven seas lagoon and making a family afternoon on the lake.
- winter sleigh ride at ft wilderness.
Things I've enjoyed that are not offered by disney but very close by:
- Helicopter tour, I've done the longer multi-theme park one. Going to be doing the illuminations night one soon

(not all of disney is a no fly zone and depending on package it's actually reasonable cost).
Free things to do that can change your view of the parks:
- Sorcerers of the Magic Kingdom (kids and gamers in the family will enjoy)
- Agent P (more geared to younger but if you have a gamer in the family they might be entertained by it).
