Any recommendations for a unique 'experience' for aging parents?

We're returning to WDW next year with my parents (in their late 70's). We'd like to plan a unique 'experience' for them, outside the parks. A lot of walking/standing isn't possible, so no tours. If possible, it would be nice if the experience could be outside the theme parks. We've already done a private IllumiNations cruise, ridden the Amphi cars, rented boats at MK resorts, and did the hot air balloon ride. We've done some in-park dessert parties. Does anyone have any recommendations that won't break the bank? We thought about the Ferrytale dessert party, but it appears that seating is limited and that's a deal breaker. We thought about doing Victoria & Albert's, but that breaks the budget. TIA!
 
There is a Starlight Safari at Animal Kingdom Lodge. There is also a "Dine with an Animal Specialist" lunch at Sanaa at AKL. You could also look into the Highway in the Sky dine around on the monorail.

Any interest in animals? We did the Wanyama Safari at AKL earlier this year and really enjoyed it. It includes dinner at Jiko. The only walking required is from Jiko to the resort entrance and back - the safari part is all on the back of an open air truck bed with seating around the perimeter. Our CM safari guides were incredible and we walked away from the experience with a whole new/different understanding of AKL, the savannas, and the animals. In looking back at the past year, this was definitely one of the highlights.

It’s in a small group setting, so there will be others on the tour/at dinner. Not sure what total capacity is, but there were about a dozen folks on our tour, including us (it was me and DW).

If they are big Disney fans, then I highly recommend Lunch with an Imagineer. They have 2 locations - Brown Derby at HS and Citricos ( I think Citricos may be dinner ). We've done the lunch a few times and it includes a 3 course meal ( it's a private menu that you can choose 3 main courses from ) and an Imagineer who talks about their experiences and answers questions. Our lunch in September was about 2 hours long and was a small crowd of 10 with the imagineer.

We just did the twilight savanna Safari at kidani. Open air truck, walk up several steps and long benches down sides of the truck. We did the 10pm, Candi was the guide ( Excellent!)
At pofq they can take a horse and carriage ride..lovely ride.
 
Bok Tower Gardens: Adult: $15 per person
Located in Lake Wales.
Very pretty and relaxing and take it at your own pace.

The Singing Tower carillon concerts are at 1 & 3 p.m. daily with short selections played on the hour and half-hour. The carillon schedule features live concerts by Geert D’hollander mid-October through mid-May, Thursday to Sunday. Recordings from the Anton Brees Carillon Library collection can be heard during the summer months from mid-May to mid-October. Concerts can be heard throughout the Gardens and there is no additional ticket required.

If you could say the month you're going I would have a few more suggestions.
