Any Gluten-Free Vegans/Vegetarians? Recipe Help

I'm not currently following a vegan or vegetarian lifestyle, but feel myself naturally starting to adjust my diet that way mainly for humane treatment of animals and cost. When I do purchase meat or animal products I select locally raised organic pastured products. Anyway, I want to make this recipe for veggie burgers but also want them to be gluten-free...and at the same time want to avoid the highly processed gluten-free products...

What can I substitute the breadcrumbs with since I don't want to use processed GF bread (or premade breadcrumbs)? I thought maybe a small amount of coconut flour or almond meal/flour but I don't know if that would make them too dry since the recipe already calls for oats made into oat flour. Any suggestions?
 
Do you consider rice chex to be too processed? I'd do those crushed and soaked in whatever milk you use. Otherwise I might try cooked rice as a binder. Good luck!

I could try an organic puffed rice cereal with no other ingredients I guess but I love your idea of cooked rice! I could process it so its in smaller pieces...great idea!
 

Coconut flour alone isn't a great substitute. It absorbs more than regular flour and if you use it instead of flour and try to bake something you'll end up with mush. Almond meal alone is more dense. From reading the recipe, I'm not sure it really needs the breadcrumbs. You can try substituting quinoa. Toasted or untoasted. You could even try putting it in a food processor to use as a binder for the patties.
 
I love oh she glows! Search for recipes by Renee on the Plant Based on a budget site, she has great vegan recipes that are almost always gluten free as well. I hope your burgers turn out delicious :)
 
never tried this- but (since Almond Flour is so awesome)...maybe lightly toast some almond flour to get the excess moisture out then try them???
 
I use oatmeal as a binder in my meatloaf and in meatballs- pulse it smaller and let it sit in the liquidd and add to the mixture- works awesome- non- gf people do not even notice
 
Thanks for the additional suggestions! I still haven't made them but definitely will be making them this week. I've been very busy making a bunch of other vegan recipes (mostly from Oh She Glows)! We've loved every single thing so far and I now own the Oh She Glows cookbook which is a big deal for me because I typically find cookbooks useless with the millions of recipes floating around on the Internet...but her cookbook is wonderful!
