Doesn't sugar free Jell-O have aspartame or splenda in it? Personally, I would rather my kid have Jell-O with sugar than either of those. If it's the latter, than I wouldn't mind the "just Jell-O" option at present time for my kid (not at all picky) and at her age, however, I can't say this will be the same when she develops stronger preferences. I also think it never makes sense to offer just 1 option!
By the way, I love the healthy shift... even so, I do realize that (especially) while on vacation, people have the desire to indulge. I think they need to offer both sides of the spectrum.
