I am assuming that DU is situated in the States. So, if I was to go ahead and use their services, how do I pay for it? Is it done something like Disney? or do I pay directly at DW?

We just paid for our cruise portion today through Dreams, sent money order directly to Dreams unlimited, made out to DCL. We used our U.S money account to avoid being burned by the high exchsnge rate, but you can use your credit card. As far as the hotels go, I am switching my existing reservations to Dreams Unlimited, but I assume it will be similar process. Will let you know as we go. You can always call their toll free number, I think it is on their website, I know they give you the number when you ask for an online quote.
