I'm thinking a GAC for DS, age 14, will make June's trip a little easier. He has AS and is a VERY picky eater. Will I be able to use the GAC at restaurants so he can order from the kid's menu? He eats from 3 main food groups: pizza, chicken nuggets, and hot dogs. ;)

Anyone can order from the children's menu at any WDW restaurant. Also you can share and sometimes they will even pre-split a main course in the kitchen. The only times this does not work is when you are at a buffet or all-you-can-eat location.

Actualy, even if you are at a buffet ad there is someone who will be eating very little let your server know in advance; often they will observe and then prerpare the check for a chidren's price.

My DDs and I often order from the children's menu.

This has happened to us. When we made our ADR, we told the CM the proper number of adults. We have not really said anything to the server, but the server noticed that youngest DD ate mostly from the children's portion of the buffet and charged us the child price for her (even though technically she should be charged the adult price).

The CMs in the restaurants will not have seen a GAC before.

I called Crystal Palace directly about this issue. The manager told me that the servers are instructed to not not charge if a child a child doesn't eat and to charge the children's price if the child only eats off the children's menu. We have purchased the dining plan and DS (who is severly autistic) sometimes can't or won't eat due to GI issues. The manager assured me that this kind of thing has been an issue in the past. She told me that if he doesn't eat, we can save his "meal swipe" for later.
