Yes, hadn't thought of that. OP don't put your
DCL luggage tags on your bag before the flight. After the flight claim your bag and do the switch and then bring the bag to the bus area as mentioned above. Yes, it negates the seamless convenience of having DCL take care of your bags but that is what has to be done if you want booze in your checked bag for the flight.

Very good points from eveyone here with respect to leaving your alcohol in your checked luggage.
Here is our experience:
After taking 11 DCL cruises and taking alcohol with us on eight of those cruises, we have never had the bottle of rum removed/confiscated from our checked luggage despite being aware that DCL's policy is to take in your carry on.
However, we take precautions when placing it in our checked luggage.
I empty the glass bottle of rum into a plastic drinks bottle with a very tight seal. I then also seal the rim with tape or similar and then place the bottle in a gallon feezer bag. That way, if any leaks, it does not damage our clothes or leaks out onto someone else's luggage.
In fact, I also write in big, bold letters "rum" on the side of the bottle so that the contents are clear.
We have had plastic swords (pirate night), plastic pistols (pirate night), corkscrews and pocket knife (tool) removed from our lugggage by Disney, but they have never removed our alcohol. This was at Port Canaveral, Galveston and Vancouver.
Like I said, that is our experience in the last ten years and we will be doing it again in January and on the Transatlantic next year. As always, we will take the same precautions.
Don't want to lose any of that valuable rum!
