Anniversary in WDW- tips and advice?

My DH and I were married at WDW on June 9, 2015. I have been thinking about our anniversary trips to Disney since we left!

What special things should we do to commemorate our anniversary?

So far, we're thinking maybe:
1 week at WDW
3 days at Universal (Volcano Bay and CityWalk)
If we take a longer trip, we can head to the beach in St. Pete/Clearwater

We would like to rent a Villa but I've been looking at the cost of off-site and we'd save if we went that route.

We've never done the dining plan, but I'm wondering about it. We will be eating out every night.

What is your favorite place for lunch or dinner? Tell me what you liked most.
