Here's a few recipes:
Crockpot BBQ Pork Roast Sandwiches
pork roast
1 bottle honey garlic BBQ sauce
Brown roast and put in pot on low before bed. After 12 hours, take out meat and dump the liquid. Cool meat a little and shred. Put back in pot with a bottle of good BBQ sauce. Cook on low a while to let flavor go through meat. Serve on buns. (note: you can do this with pork chops and chicken too)
Crockpot Sausage
1 lg. family size pkg. sausages
1 jar tomato sauce or spaghetti sauce
onions
green peppers
pasta or rolls
Put a thin layer of sauce in the bottom of the crockpot. Top with chopped onions and green peppers. Then layer sliced sausages. Pour sauce over the top and cook all day on low. We like it over pasta.
Santa Fe Chicken
15 oz can black beans, rinsed and drained
2 cans corn, drained
1 c. thick and chunky salsa (I've used Rotel tomatoes in a pinch)
5 - 6 boneless chicken breasts
1 c. cheddar cheese
Combine the beans, corn, and 1/2 salsa in crockpot. Top with chicken and remaining salsa. Cook 2 1/2 - 3 hours on high. Sprinkle with cheese the last 5 minutes.
