Has anyone ever had the experience of travelling to Orlando (Disneyworld) coming from Toronto via New York? If you have what are your recommendations? Is there ever any cancellations due to weather conditions specifically during Xmas holidays?

Or is taking the Greyhound a better option, considering the weather conditions?

Are you asking if the trains are affected by weather? Trains are rarely affected by weather to the same extent as buses or cars. I have heard that in the summer in the south, trains sometimes run slower so the tracks don't deform in the summer heat!

In any case, I cannot help you with your first question. I have taken the Autotrain from Washington DC to Orlando.

What my concern is that if there is a snowstorm, would there be any cancellation on either Amtrak or Greyhound, would they try to recompensate somehow or get you on the next train available.
Because this would cause a problem if we have reservation at the resort due to check in dates I believe.

I have gone both greyhound and amtrak from Toronto to New York but nothing further. I like Amtrak better as you can always get up and walk around where via bus your sitting most of the way, yet when I was younger I went from Toronto to LA, California by bus and it was a great experience but then again I was younger. I had inlaws who travelled from New York to Florida via Amtrak and they liked it again better then bus as you can walk around.
When I travelled via Amtrak from Toronto to NY after Christmas YEARS ago we got a little stuck as the engine gave out and there was no power on the train and we had to wait for a new engine to get to us we were in the middle of now where LoL BUT that was the only bad expeience I had and anything can happen with buses or trains in bad weather as with the highways and buses you never know
